It seems that preview meshes of Skeleton/Animation can't be saved correctly.
I had changed a preview mesh and had saved it, but after reopening the project, the setting was ignored and the preview mesh wasn't changed.

Steps to Reproduce
  1. Open ContentExample
  2. Open Content\ExampleContent\AnimationDemo\Meshes\M_MALE_Base_Skeleton
  3. You can see its preview mesh is SK_L_Male_Base
  4. Set the preview mesh to SK_S_Male_Base
  5. Push "Apply To Asset" button
  6. Save the skeleton
  7. Close the editor and reopen
  8. Reopen M_MALE_Base_Skeleton
  9. You can see the preview mesh isn't changed and it's still SK_L_Male_Base.

(I confirmed the same bug happens on animation assets )
